FOOD TOLERANCE & GUT RESTORATION PROGRAM
Personalized Gut Restoration for Food Reactions
Food Tolerance & Gut Restoration Program
Rebuild Gut Function. Expand Your Diet. Feel Safer Around Food Again.
When more and more foods seem to cause bloating, digestive discomfort, skin reactions, headaches, or histamine-like symptoms, removing another food may bring temporary relief—but it rarely explains why your tolerance changed.
The Food Tolerance & Gut Restoration Program is a personalized 3–4 month program designed to support the intestinal environment, microbial balance, inflammatory regulation, and your ability to gradually tolerate a wider variety of nourishing foods.
Rather than handing you another restrictive food list or an overflowing supplement schedule, we begin with a personalized, food-first plan.
Carefully phased support, relevant lab markers, and ongoing guidance help your digestive system become more resilient.
Food Intolerance Is Not Always About the Food
Food reactions may be influenced by the condition of the intestinal lining, microbial activity, immune signaling, digestive function, metabolic health, stress, nutrient status, and—in some people—genetic tendencies.
When the gut–immune interface is irritated or the intestinal environment is out of balance, foods rich in histamine, FODMAPs, fiber, sulfur compounds, salicylates, or other natural food chemicals may become more difficult to tolerate.
Removing a reactive food can lower your immediate symptom burden.
But long-term avoidance does not necessarily improve the conditions that contributed to the reaction—and it can make it harder to obtain the nutrients and diverse fibers needed to support a healthy microbiome.
The goal of this program is not to force foods back into your diet before you are ready.
It is to create a more supportive intestinal environment and gradually build tolerance at a pace your body can handle.
Are Food Reactions Making Your Diet Smaller and Smaller?
You may be eating carefully and still experience:
- Bloating, gas, abdominal discomfort, constipation, or diarrhea
- Reactions to leftovers, fermented foods, high-fiber foods, or foods you once tolerated
- Flushing, itching, headaches, brain fog, fatigue, or histamine-like symptoms
- Increasing sensitivity to foods, supplements, or medications
- Autoimmune or inflammatory symptoms that seem connected to your digestion
- Unpredictable reactions that make meal planning stressful
Perhaps you have already tried a low-histamine, gluten-free, dairy-free, low-FODMAP, low-oxalate, or another elimination diet. You may have felt better at first, only to discover that reintroducing foods was much harder than removing them.
When the safe-food list keeps shrinking, the next step is not always more restriction. It may be time to support the gut ecosystem that helps determine how your body responds to food.
NOT ANOTHER “LEAKY GUT” PROTOCOL
Less Restriction. Fewer Supplements. A Clear Path Back to Food.
The gut is an ecosystem, not a leaky pipe waiting for one more repair powder and multiple supplements.
This program looks beyond “leaky gut” alone and considers intestinal cells, the microbes living alongside them, blood sugar regulation, immune and inflammatory signals, liver and metabolic health.
The goal is not to keep you on a gut protocol. It is to help you move beyond one.
what we will explore
The Missing Link Between Your Gut, Metabolism, and Food Reactions
Your gut does not function in isolation. Food tolerance can be affected by inflammatory activity, microbial balance, blood sugar levels, liver function, hormones, stress, medications, prior infections, and antibiotic exposure.

Gut Ecology and Intestinal Function
I will review your digestive history, bowel patterns, previous infections, medication and antibiotic use, current food reactions, and other factors that may be affecting the intestinal environment.

Food Reactions and Dietary Variety
Working with you, I will help identify the foods and food compounds most relevant to your symptoms without assuming every reaction is caused by histamine. Your food plan will protect your current tolerance while paving the way toward greater variety.

Microbiome Support
Instead of trying to micromanage every organism with a long list of antimicrobials and probiotics, the program supports the intestinal environment with a carefully sequenced combination of food, targeted fiber, and selected microbial support.

Metabolic and Liver Health
Blood-sugar dysregulation and other metabolic imbalances may contribute to inflammation and affect the gut–liver relationship. I will review relevant dietary patterns and laboratory markers rather than treating digestion as a separate system.

Nutrigenomics - When Available
Genetic testing is not required. If you already have useful genomic results, I will consider relevant pathways involving inflammation, cellular protection, gut health, nutrient metabolism, and food reactions when personalizing your plan.
how it works
Food Tolerance & Gut Restoration Program
Complete Personalized Evaluation
Your program starts with a review of your health history, digestive symptoms, food reactions, diet, medications, supplements, and recent lab results. When needed, we will identify additional lab markers that may help guide your program. Lab fees are not included.
Build Your Personalized Foundation
During your initial consultations, we will connect your symptoms, food history, lifestyle, and lab findings to create a realistic food-first plan. Recommendations are tailored to your current tolerance, dietary preferences, and health goals.
Progress Through Program Phases
We will meet frequently during the early weeks to assess your response, adjust the supplement plan, and decide when to introduce the next food or protocol phase. Targeted fiber and probiotic or postbiotic support are introduced only when your digestive system appears ready.
Reasses & Plan What Comes Next
As your digestion and food tolerance improve, we will work toward greater dietary variety and more microbiome-supportive foods. At the end of the program, we will review your progress and updated laboratory markers when appropriate, then create a practical maintenance plan or recommend the next level of support.
The Food Tolerance & Gut Restoration Program May Be Right for You…
You are a woman over 40 who:

Have digestive symptoms and react to multiple foods or food compounds

Followed a restrictive diet but are unsure how to expand it safely

Experience histamine-like symptoms alongside poor gut health

Became more reative after antibiotics, an infection, prolonged stress, or hormonal changes

Have autoimmune, skin, inflammatory, or metabolic concerns that may overlap with gut function

React easily to supplements and need a slower, more closely supported approach

Want a personalized plan with regular guidance-not another one-size-fits-all gut protocol

Are willing to make gradual food and lifestyle changes and complete appropriate lab testing
This program is especially helpful when you need implementation support over several months—not simply a list of recommendations and foods to avoid.
what is included
Food Tolerance & Gut Restoration Program
Comprehensive Health, Digestion and Nutrition Evaluation
A 60-minute consultation to review your digestive symptoms, food reactions, health history, diet, medications, supplements, laboratory results, previous antibiotic exposure, and goals.
Personalized Phased Food Plan
Your plan begins with foods you can reasonably tolerate and progresses as your symptoms allow. The aim is to improve nutritional adequacy and gradually increase variety—not keep you on a restricted diet indefinitely.
Targeted Supplement Protocol
Your plan may include a sulforaphane-yielding whole-broccoli sprout product, one carefully selected probiotic or postbiotic, targeted fiber, and other support as indicated. Products are introduced slowly and adjusted according to tolerance.
Six One-on-One Consultations
The program includes your comprehensive evaluation, a 60-minute kickoff consultation, two early follow-ups, and two additional monthly progress consultations. The final visit focuses on updated lab findings, maintenance, and next steps. A genomic review is included if you have completed genomic testing.
Relevant Lab Testing Guidance & Review
We will use your health history and symptoms to identify lab testing results and markers such as genomics when available that meaningfully guide the program. Existing recent results are reviewed whenever appropriate to avoid unnecessary duplication. Lab testing fees are separate.
Ongoing Secure Chat Support
You will have access to secure messaging through Practice Better throughout the program. Regular communication allows us to respond to tolerance issues, clarify recommendations, and make thoughtful adjustments between visits.
A Gentler Way to Support A Reactive Gut
This program intentionally avoids introducing a large stack of supplements at once to avoid overwhelming an already sensitive system. The food plan evolves in phases, slowly introducing foods as you increase tolerance.
The program starts where you are, then works towards the diversity your gut ecosystem needs, supports digestion, microbial balance, and food tolerance.
Research-Informed, Personally Guided
The science provides the framework. Your response determines the pace.
The program is informed by research on sulforaphane, Nrf2 gene signaling, intestinal epithelial function, inflammation, and the host-gut microbiome relationship.
Dr. Christine Houghton’s 2019 review describes sulforaphane as a highly bioavailable, food-derived compound that can influence Nrf2-regulated cellular defense and NF-κB-related inflammatory pathways.
Her 2023 paper extends this science into a clinician’s hypothesis to support gut ecology, accompanied by observational case studies of digestive dysfunction and food intolerance.
These publications provide a rationale for the GEMM (Gut Ecology Metabolic Modulation) approach; they do not establish that sulforaphane or this program diagnoses, treats, or cures a specific gastrointestinal, immune, or metabolic condition. Your plan remains individualized and is coordinated with medical care when appropriate.
About Eileen Schutte, CN, MS, FMN
I am a Clinical Nutritionist, Functional Medicine Nutritionist, and Nutrigenomics Counselor specializing in
In addition to completing my master’s degree and extensive genomic studies, I have completed Dr. Christine Houghton’s Gut Ecology and Metabolic Modulation practitioner training, as well as the program updates.
Combining this framework with more than a decade of clinical nutrition experience, a food-first philosophy, and an understanding of how sensitive and frustrating food reactions can become, I create a personalized plan for you.
My goal is not to give you the longest protocol or the shortest food list. It is to help you understand what may be contributing to your reactions, introduce support in the right order, and, whenever possible, build a more varied and nourishing way of eating.

Which Program is Right For You
Need a Genomic Roadmap Rather Than Ongoing Gut Support?
Histamine Gene Program
The Histamine Gene Program may be a better fit if your main goal is to understand how genetic pathways influence histamine, hormones, inflammation, methylation, stress response, and nutrient needs.
It includes comprehensive genomic testing and personalized recommendations but is not an extended gut-restoration program.
Want Genomics and Structured Gut Restoration?
For clients who would benefit from both the Histamine Gene Program and the Food Tolerance & Gut Restoration Program, the two programs can be completed as one coordinated package.
The programs have a combined value of $2,794. When purchased together, you will receive a $300 package discount, bringing your total investment to $2,494.
This option provides both a deeper understanding of how your genetic pathways may influence food reactions and structured guidance to support gut function, dietary variety, and long-term food tolerance.

Frequently Asked Questions
Is this program completed virtually?
Yes. All consultations are conducted virtually through Practice Better, a secure client platform. Your questionnaires, recommendations, recordings, guides, and protocols will be available in your account.
Is genetic testing required?
No. This is a gut-restoration and food-tolerance program, not a genetic-testing program.
If you already have relevant genomic results, they may be considered when personalizing your plan. If comprehensive genetic evaluation is a priority, the Histamine Gene Program or Histamine Gene-to-Gut Restoration Program may be a better fit.
Will this tell me exactly which foods I can eat?
No test or program can create a permanent yes-or-no food list. We will use your symptoms, food history, dietary pattern, laboratory findings, and response to each phase to guide food choices and gradual expansion.
Is this a low-histamine program?
Not exclusively. Histamine may be one contributor, but reactions can also involve FODMAPs, fiber, sulfur compounds, salicylates, digestive capacity, microbial activity, or other factors.
A temporary reduction in certain foods may be appropriate, but the broader goal is to support gut function and, where possible, increase tolerance.
Will I need lab testing?
Yes, relevant lab markers are an important part of this program. We will first review recent results (the last 3 months) and identify what additional testing needs to be completed.
You may request testing from your physician. When appropriate and available, a customized panel may be arranged through Labcorp or Quest. Lab fees are not included as they vary for each individual.
Do I need a stool microbiome test?
Not necessarily. Testing is recommended only when it is likely to change clinical decisions.
The program focuses on the health of the whole gut ecosystem rather than trying to micromanage every microbial species on a report.
Do I have to stop my medications or current supplements?
Do not stop or change any prescribed medication unless instructed by your physician or prescribing healthcare provider. I will review your medications for context and may recommend discussing potential concerns or adjustments with that provider.
I will also review your current supplements. It is not uncommon to temporarily pause or discontinue certain products to simplify your routine, avoid unnecessary duplication, or prevent them from interfering with the program’s targeted approach. For example, high-dose antioxidant supplements, such as vitamin C, may counteract some of the intended cellular signaling effects of sulforaphane.
Any supplement changes will be personalized, clearly explained, and introduced carefully.
What if I react to supplements?
This program was designed with sensitive clients in mind. Products are introduced individually, often at a low dose, and adjusted according to tolerance.
Secure chat support helps us respond to concerns between consultations.
Is sulforaphane safe everyone?
No food-derived compound or supplement is appropriate for every person. We will review your health history, medications, tolerance, and relevant contraindications before making recommendations.
Some people experience digestive discomfort when beginning a sulforaphane-yielding product, which is one reason dosing is introduced gradually.
Are supplements included in the program price?
No. Products are purchased separately through practitioner channels or Fullscript and generally total approximately $250–$350 across the program, depending on your individualized plan.
How quickly will I be able to add foods back?
There is no fixed schedule. Some clients progress more quickly than others, and symptom improvement does not guarantee tolerance to every food.
We will expand your diet gradually based on your response rather than pushing ahead before your digestive system is ready.
Does this program treat IBS, SIBO, MCAS, histamine intolerance, or autoimmune disease?
No. The program provides personalized nutrition education and support and does not diagnose, treat, or cure disease.
Medical conditions and red-flag symptoms require evaluation and care from a qualified medical provider. I will coordinate recommendations with your healthcare team when appropriate.
